Although olives were grown in ancient Asia and Africa, the country of Spain likes to claim top honors in its discovering this fruit. No doubt about it, the U.S. uses a hefty share of the yearly yield, not only the California crop but imports as well. And since the healthy benefits of olive oil are touted, we buy it by the gallon. We may not have brought them over on the Mayflower, but once the influx of immigrants began, we were quick to adopt them. Now many food stores feature an olive bar, priced by the pound. Years ago, it was even a popular female name (and who can forget Popeye’s girlfriend Olive Oyl).

The olive tree is remarkably hardy, and many have been identified throughout Mediterranean countries as over a thousand years old and still producing. They favor sun and hot weather and don’t get thirsty as often as other agricultural crops, thus making them well-suited to Southern climates. Ancient Roman Emperors ordered them to be planted in the Forum. Greeks treasured their Kalamata variety, indigenous to the region that bears its name. They graced the dining tables in Israel, Syria and Turkey, featuring their own regional favorites. In South America, the country of Argentina has proclaimed olive oil a “national food” and is striving to enter the world economy. They may not be a major player yet, but they’ve set their sights on this popular export.

After harvesting, olives require curing since they cannot be eaten right from the tree. (Don’t even think about it.) A lengthy process is required, using lye, brine, water or salt, with a fermentation period to eliminate the strong bitter taste. For oil production, the first press is Extra Virgin, the highest quality. The next press is simple olive oil. It’s interesting to note that most cooking oils require chemicals or industrial refining, while olive oil is an exception. (No wonder it’s good for us.)

They add flavor, color and a little oomph to just about everything. But just as a cautionary note, if you don’t purchase the pitted ones, please give your guests and family a “heads up!” No one wants a nice meal spoiled with an emergency trip to the dentist.

4. That famous marinara spaghetti sauce with Parmesan and American cheese.

Who would turn down such a great meal as spaghetti especially with some garlic bread to go along and maybe a glass of red wine? Ever noticed after eating those 3 portions of spaghetti you find it difficult to even get up from the table and walk to the living room coach? That’s because the tomatoes that make the famous spaghetti sauce are high in acid, and acid based foods mixed with starchy foods as pasta simply don’t mix. It makes for a digestion nightmare, no matter how delicious it is, if you don’t want to be weighed down by what you eat, best to avoid spaghetti and lasagna with tomato sauce. 5. Bread and Jam, or that peanut butter and jelly sandwich

Oh how we love that peanut butter sandwich with potato chips and a cold glass of milk. Many of us grew up on that one! The problem is, such simple carbohydrates in such a delicious mix cause our blood sugar to go through the ceiling and then the body has to release large amounts of insulin to bring it back down. Taco Caterers Can Accommodate Special Dietary Restrictions

If your guests are prone to food allergies or other restrictions, a taco-menu party might be the solution. This is adaptable food – you just need to plan.

We’ve entered the age of dietary restrictions. How many parents of young children have found that something as simple as a birthday party can turn into a tragedy if there are peanuts in a bowl? You might as well put on the invitations there is a margarita bar for all the second graders.

The facts are that adults have as many or more restrictions on what they can eat than children. Their goal may be to maintain a diet or, more seriously, avoid getting sick. People talk freely of having a gluten allergy, to some skepticism (unfounded, often), but in fact to those with celiac disease, a bread or dessert with gluten can in extreme cases send them to the hospital.

Parties with taco catering might have an advantage in this arena. This is because a taco is really more a category of food than a specific dish. Allergic to shrimp? Get the chicken, beef or tilapia taco instead. After all, taco caterers today offer a wide range of taco specialties including fish taco catering and vegetarian taco catering.

There is the matter of the taco shell, as well as the marinades or other fillings. And if the dietary restriction has to do with sodium content, kosher, or anything else, the diner should check with the host before the event to identify if anything needs to be avoided.

Best Thing Since Sliced Bread

Where did sliced bread come from? (No, it wasn’t explorer Marco Polo who brought it back from China.) An enterprising German named Otto Frederick Rohwedder invented the first bread slicer, in Davenport, Iowa. While he fiddled around with his invention as early as 1912, it wasn’t until 16 years later that he had perfected the machine and was ready to introduce it to the public, notably bakeries.

Enter Wonder Bread. Starting in 1921, a local business in Indianapolis named the
Taggart Baking Company marketed Wonder Bread sold in whole loaves. As the story goes, an executive of the company was watching hot air balloons floating across the sky and declared them a “wonder” and the name took off (not unlike a hot air balloon). Once the Continental Baking Company bought out Wonder Bread in 1925 and began selling it sliced a few years later, it became a revolutionary new product across the country. Homemakers loved the idea that it was pre-sliced, as well as its soft texture, which translated (and was promoted) as being fresh.

Obviously the bread had to be packaged, due to the slices, so it was banned temporarily during WWII in order to conserve paper. But as the baby boomers went off to school, lunch boxes across the country carried sandwiches made with Wonder Bread each day, and it was literally a wonder of the 1950’s. Much to the horror of white bread aficionados, WB vanished in 2012. It seems Hostess Brands (distributors of Twinkies and cupcakes) declared bankruptcy. But another company, Flowers Foods, sprang to the rescue just a year later, once again stocking the shelves of supermarkets with the beloved white bread. (Phew… a year without Wonder Bread must have been tense.)

So what could be better than sliced bread? Close your eyes and imagine the irresistible aroma of roasting peanuts. Already a favorite at ballparks and circuses, the humble peanut grew in popularity, and today peanut butter dominates the sandwich choices, smeared on white bread and perhaps covered with grape jelly. Although George Washington Carver is known for his discovery of peanuts and their many uses, it was John Harvey Kellogg, creator of cold flaked cereals, who actually came up with peanut butter in 1895. Along with his brother, they patented their processing method. Originally the peanuts were steamed but a much more pleasing taste emerged when roasted instead. The tasty nut butter supplied a good protein for children and older folks who could not chew meat.

At the St. Louis World’s Fair in 1904, many new foods were introduced, and alongside potato chips and waffle cones to hold ice cream, the smooth, creamy delicious peanut butter was a hit. Slap it on some bread, add jelly, and it supplied wholesome rations to our soldiers in WWI. And once Wonder bread was introduced a few years later, the PB&J sandwich offered a good, easy and economical lunch for children of all ages and became a staple for Americans.

When snack foods were popularized in the 1930’s, peanuts and peanut candies certainly were on the hit parade and now comprise some of the most in-demand products in the U.S. We eat more than six pounds of peanut products annually per person, and that adds up to two billion dollars at retail. (Cha-ching.) Peanut butter alone makes up about half of our yearly consumption. The remainder includes nut snacks, baked goods and candies. Not to be ignored, peanuts provide a popular cooking oil as well, and some fast food restaurants use it for frying.

So are you a chunky or creamy fan? Do you eat it in sandwiches (white bread, of course) or just scoop it straight from the jar? With apple slices? In celery stalks? We know that Elvis Presley’s favorite gourmet dish was fried peanut butter and banana sandwiches, although we’re not sure if his cook used sliced white bread. Probably.

The author is strictly a creamy fan. She enjoys it with wedges of green apples, on toast and in cookies.
